I thought gnocchi was some type of potato but I found it next to the boxed spaghetti so… Yeah, I don’t know. I love these little things but have never tried making them myself until now. You can find the original recipe RIGHT HERE, I made just a few changes.
- 1 16 ounce package of gnocchi
- 1/2 chopped yellow onion
- 4 cloves of garlic, minced
- 1/2 cup water
- 6 cups chopped spinach
- 1 15 ounce can diced tomatoes with Italian seasoning
- 1 15 ounce can of white beans
- Ground black pepper
- Shredded mozzarella cheese
- 1 teaspoon olive oil
Cook the gnocchi according to the package directions.
Heat one teaspoon olive oil in a large skillet over medium heat. I tried to use a medium skillet and it wouldn’t hold everything so definitely use a large!
Add onion, garlic, and water. Cover and cook until the onion is soft.
Add spinach and stir until wilted.
Stir in tomatoes and beans. Pepper to taste.
Stir in the gnocchi and add a layer of mozzarella cheese on top.
Cover and cook until cheese is completely melted.
Stir well and serve! This recipe will be well under 500 calories if you use only 1/2 cup part-skim shredded mozzarella cheese and 1/4 cup finely shredded parmesan cheese. I went the unhealthy route and added a ton of cheese and it was perfection.
